Sugar Cane Syrup

A syrup made from sugar cane. Rhum Clement suggests the following:

  • 2 cups of Turbinado sugar
  • 2 cups water
  • 2 cinnamon sticks broken in half
  • 1 teaspoon of vanilla extract or 2-3 vanilla beans
  • 3-4 cloves
  • 1 teaspoon of grated nutmeg

Simmer all of the above ingredients together for 15-20 minutes or until the desired consistency and strain through a double strainer and store in a cool place before serving. This will make enough syrup for 20- 25 cocktails.
