Croizet always distillates the wine with 10% of lees, which produces more complex aromas and essential oils in the Cognac. Croizet X.O. is aged considerably longer than the prescribed number of years in the cellars in St.-Mime-les-Carrieres. The Cognac is then stored in French oak casks.
