Pear Brandy (eau de vie de poire Williams): still my best product and my best seller. Except for big-time Italian places, I still start every presentation with this product. The pear nose is intense, the taste is strong, but pure, and the aftertaste is clean with a surprisingly strong hint of pear. In warmer parts of the country it should be served chilled in the summer. The heart of my product line is the eau-de-vie, all made according to the most old fashioned techniques. We use only pure whole fresh fruit, some of which we grow in our own orchards. We crush and ferment the whole fruit, and then distill the fermented mash in our small German-made pot stills. The result is very good, and very costly. It takes about 30 pounds of pears to make one 750ml bottle of Pear Brandy.
