Versailles Rum is distilled in the heart of Guyana, east of the Demerara River. Here, in the days when this was made, they used, uniquely, two different pot stills, alternatively feeding one condenser. This ancient process gives Versailles its definite and different style. This Rum was distilled in 1984, and shipped to England, where, in small oak casks, it lay maturing in traditional cool, damp cellars until it was bottled, in 1999, at the optimum strength of 46% (92 US proof). It shows best as an aperitif, when it offers a delicate floral nose, after which pleasing citrus and toffee flavours come through on the palate.
