Fill an old-fashioned or rocks glass with small cubed ice. Pour enough Coconut Rum in to 'settle' the ice and cover it. Pour in a splash of Rose's Lime to taste. 'Box the drink to mix. (Pour from one glass to another, once or twice, only).
I think it would probably be considered a Coconut Rum Gimlet, but the idea was inspired while sitting at a bar in Florida, as Harry’s 'Coconut' song was playing ... After a few 'sample rounds' were made and passed around... it was a hit and the name stuck... Sadly, the bar, 'Jakes' in Stuart, Florida, no longer exists.
