vermouth should be treated like wine (it is a fortified wine after all).
expect it to go 'off' (stale) after 3 days of being open.
and yes, that does mean that most bars have stale vermouth on their shelves.
use the smaller (350ml) bottles, and if you want to, refigerate the vermouths.

Yes. I find that Noilly Prat can keep for twice as long, if refrigerated.
When harsh; it will become dark in colour, taste and aroma will sharpen. Completely ruining a Dry Martini.
Allways refrigerate, and never older than three weeks.

Not only will keeping it in the fridge keep it longer, it will also keep fruit flies out of it in the summer. They seem to have a great affinity for it!

Our Bar in the Uk has Martini Vermouth on optic, we sell very little of it, and STILL the managment get the huge 1.5 liter bottles. They must be up there a good few months before we empty one. maybe thats why we dont sell much...
